RAINBOW BRIGHT SALAD

 

I’ve always been fascinated with rainbows. Ever since I was a little girl I would chase rainbows, collect rainbow things – rainbow haired troll dolls I’m talking to you, and be mesmerized by the kaleidoscope of colors, and its infinite nature. Still to this day I get gleeful when I see a rainbow has formed, or is forming. They illicit feelings of joy, beauty, wonder and happiness, truly one of earths great natural wonders. 

 

Ironically and contradictory to all of the above, is that I mostly wear black, white, grey, denim and a some floral in summer to spice it up a bit, and feel super flirty and feminine. Why? To be fully, and completely honest, it’s what makes me feel most confident and beautiful. Blank canvas, clean slate, glowing skin, and a bag full of rainbow colored vegetables, and it’s all I need.

 

I’m also into uniform dressing, and having more of a curated / capsule wardrobe. (Did you guys know that I went to FIT in NYC for Fashion, AND had a fashion blog leeselooks  ?) Still hard to believe even for myself!!! I don’t follow trends or fashion blogs, read magazines, look to what others are wearing anymore, but simply wear what I love, and what makes me feel my best.

 I’m not in fashion any longer, but still at my core, have a very creative spirit, vision, style and edge to me, which I believe now translates to my branding, style and overall feel of LIFEBYLEESE along with my purpose, passion and mission! When people think of LBL, when you’re coming here, I want you to feel at ease, stress free, supported, guided, and always leaving with a nugget of something to transition / shift your life in a positive way through food, lifestyle and mind / body practices.

Ok, not back to scheduled programming! Rainbows, colors, happiness and joy everywhere you look. This is what I see when I see fruits, and vegetables. Rainbows. They make me overly joyful, and are full of endless possibilities, opportunities to heal, and offer life giving energy, the same feeling after I witness a rainbow after a massive thunderstorm. HOPE! 

Having and consuming a rainbow of fruits and vegetables is always a good place to start when shifting to a healthier lifestyle. Don’t know what to buy, and consume? Simply start by purchasing one of every color. Each color palette offers us different nutrients, vitamins, enzymes and minerals, so you know you will be getting a plethora of unique nutrients into the mix. 

Don’t get me wrong, I’m just like you, and can be a complete creature of habit! Some people need to eat a different thing every single day / meal, but I believe this is a rarity. I know everyone leads hectic lives, so don’t have time to be cooking gourmet meals on the daily:) I want to bring ease, comfort and simplicity into your kitchens. So I will use a lot of the same vegetables during the week, some out of habit, but some out of pure obsession – cucumbers, red peppers and avocados. I can’t. get. enough. If this is you, then a fun thing to do, is each week or twice a week, when you go the market or grocery store, buy a vegetable that you wouldn’t normally and cook it differently. If you’ve tried everything (you produce master you), then try using different sauces, spices and flavors. The options really are endless. 

 

As Spring weather starts to trickle in, and snow starts to melt, I love bringing in more fresh, crisp and vibrant colors into my life. The days can still be quite gloomy, so adding in some pop, really livens things up. 

Color therapy is a real thing, as different colors evoke different feelings, and emotions. Think of how you feel when you think of a black cat, as opposed to a white fluffy one? Very different. Same thing when we look at clothing, and most importantly our topic for today, fruits and vegetables! Here is a quick overview of what some of the colors represent: 

 

Red- Life force If you think of the color of our blood, this is truly our life force. It’s powerful, and can be intense

Orange – Color of stimulation, it will give you a nice kick start when you’re feeling low or unmotivated

Yellow – Happiness, optimism and laughter (emoji’s aren’t yellow my coincidence 🙂 )

Green – Balance, harmony, and extremely soothing. We can look to nature for our greatest example 

Blue – Calming, serene, wise, peaceful

Purple – Wealth, wisdom, royal, prosperity 

Pink – Playful, youthful, loving, magnetic, understanding

White – Purity, light, innocence 

Black – Power, intelligence, strength 

 

With all of this in mind, I wanted to create a salad that evoked so much life, and power just by looking at it, not to mention it being extremely nutrient dense and energizing. I couldn’t just use normal beets, and carrots (haha), so I sourced rainbow carrots and candy cane beets! I can’t get over their beauty. 

This salad took under five minutes to make, and you can totally play with the ingredients and add more protein and healthy fats to the mix, if you will be having it for a main meal. This recipe is meant for a side salad, but play around and see if you can had even more colors to it.

 

WHAT YOU WILL NEED //

 

  • Mixed greens) + Mache greens (they look like little flowers!)
  • 2 Rainbow carrots I used purple and yellow
  • Candycane beets (I can’t get over their beauty)
  • 1/2 a red pepper 
  • 1/4 – 1/2 green avocado
  • handful of pistachios 

 

DRESSING //

 

  • 1 TBSP avocado oil (you could use olive)
  • 2 TBSP Apple Cider Vinegar (ACV)
  • dash salt + pepper + cayenne
  • squeeze of lemon (optional)

 

Place all cut ingredients into bowl, make dressing, toss and enjoy! It’s soooo simple. This will make the perfect summer side to all of your picnics, BBQ’s and parties.
