Today I wanted to share this recipe in light of my upcoming EBOOK Release!!!! ONLY A FEW MORE WEEKS TO GO. I couldn’t be more thrilled to share this journey, my book, and to further help, guide and inspire you on your journey, wherever you are. I know this sounds incredibly cheesy, and I can’t really think of a more succinct way of relaying my emotions, but everything I do is for you, my readers, clients, and whoever else hears my voice, writings and reads my upcoming book. After going through my journey with Lyme Disease and losing every aspect of my health – body, mind and spirit, it truly breaks my heart to see people suffering, battling their bodies, and unable to live their best life, because their health (body / mind) is failing them. I want to guide, support, motivate, help heal and love you along the way. Long story short, my vision is to help you do all of the above, through the best mediums, channels and products, in the ways I know how. This is my promise to you.

So speaking of glowing, healing and living your best life, I wanted to share one of my favorite dressings from the book, which I use for one of my all-time favorite salads. This Reset will be different from a lot out there because 1) I used a lot of these recipes on my healing journey with Lyme Disease, so the recipes are all very, very alkalizing and anti-inflammatory, so they really target inflammation and raising your PH levels and 2) There are lots and lots of greens involved! I’m not a huge fan, personally and professionally in my practice, of juice cleanses, diets, cutting out major food groups (unless under going major treatment), fasts, and detoxes. Which is why I incorporate lots of greens aka Liquid Sunshine in my recipes. They are thee best way to intake an abundance of food, while also allowing your organs to do the ‘detoxing + ‘cleansing’ naturally, the way we were made to do. I want your life and body to be full of liquid sunshine, an abundance of fruits, vegetables, protein and healthy carbs. This won’t only help you Reset your body, but it will give you the kick-start you need to heal, find your glow, reduce pain, become happier and help you lay the foundation for a complete lifestyle change, shift or tweak.
This isn’t a book about restriction, deprivation or being dogmatic! It’s a book on laying the foundations of living your healthiest life – body, mind and spirit. I target all three, because health is holistic, and it’s 100% not just the food you eat. There are so many more components to being healthy, finding your happy weight, healing your gut, clearing your skin, finding your sleep patterns, etc. Health is holistic, and everything is connected. You can’t lose weight if you’re unhappy at home or in your relationships, or you won’t be able to tackle your skin if your gut health is compromised and your wildly stressed or anxious on the daily. We need to work with our bodies, as one, and connect the dots. This is what I help you do, just call me the dot-connecter (yes, I’m a giant nerd, always have been), but that’s me. I just wish you could see my passion, joy and giant wish for everyone! It’s my purpose to serve you, and I hope through my first book I do (The second is already in the outlining stages), and have I sooooo many more exciting things coming your way.
In the meantime, here is my favorite green dressing. Toss this into any salad. Massage it with kale, and eat it with glee. It’s deeply nourishing, glow enhancing, and stellar for your digestion. My favorite way to eat it is with crunchy romaine, cherry tomatoes, cucumbers, radishes and some edamame beans. Bring it on, greens! You can never truly have enough.
GREEN GODDESS DRESSING:
- 1 avocado
- Small handful of parsley (flat or Italian)
- 1 garlic clove
- Juice of 1 lemon
- 3 tablespoons of apple cider vinegar
- Sea salt/black pepper for taste
- Dash cayenne
- 1/2 CUP – 3/4 CUPs of water // continue adding my TBSP if it’s too thick (it all depends on your blender or food processor)
- BLEND AWAY!
